Creating the perfect harmony between the food, the wine and the moment is the mission that Grégory Mio, our head sommelier, is particularly fond of.
A look back at a professional career that goes back to his childhood, being the grandson of winegrowers in Saint-Emilion, Grégory has had many experiences, each more enriching than the last, as he likes to say.
The latest is his participation in the International Sommelier Competition
"Master of Port" where he finished runner-up in 2021.
It is at the Cristallerie, our gastronomic restaurant, that Grégory Mio officiates and offers you his subtle combinations to sublimate the dishes magnificently thought by the Chef.
But it is not impossible that you will cross his path in all the other areas of the hotel, where his sommelier's touch can be seen on the wine lists.
